I’ve always wanted to try to make dairy-fee chocolate pudding using avocado, but I’ve never gotten around to it. In fact, I’ve never even gotten as far as looking up a recipe. But when I received a box full of goodies from Enjoy Life Foods, including a recipe for their #SpringFreely “dirt cup” that has chocolate pudding made with an avocado, I was stoked!
First, I ran to my fruit bowl… one avocado left. Yes!
I picked it up, and it was way mushy. Boo. Am I going to have to run to the store for one avocado???
No worries, I borrowed one from my mom. Moms have everything you need. 🙂
Honestly, I’m not an avocado fan myself, but my kids are! Especially Jillian. She’ll eat them as a snack regularly, and they’re so good for you!
She jumped right in and helped me make the pudding.
See? She’s the only one in the family who would actually smile while peeling an avocado! She actually enjoys cutting and chopping foods… I mean, I’ve heard that there are people out there who like that sort of thing, but I had no idea until recently that I had one living in my house!
Thank God. Maybe she can take over cooking dinner pretty soon!
But for now, she expertly cut and peeled the avocado and placed it in the stand mixer, like I told her to. Until I realized that the mixer would not puree the avocado to the smoothness needed for pudding. And I’m embarrassed to admit how long it took me to figure out that I was supposed to put it in the blender instead.
When the recipe specifically says “blend,” put it in your blender. Pregnancy brain strikes again!
No worries, though. We got it figured out.
Avocado, non-dairy milk, maple syrup, vanilla, Enjoy Life Foods Brownie Mix and our very favorite Enjoy Life Foods Semi-Sweet Mini Chips (melted) all in the blender, puree-ing away. For the full recipe, click here.
And there you have it! Chocolate pudding! And not just any chocolate pudding, but dairy-free, healthy chocolate pudding that tastes delicious!
Time to layer it up!
We dolloped the chocolate pudding on the bottom, then added a layer of crushed Enjoy Life Foods Double Chocolate Crunchy Cookies and Enjoy Life Foods Vanilla Honey Graham Crunchy Cookies for the “dirt” layer. Then we scooped out some So Delicious CocoWhip for a nice, fluffy middle layer. More pudding, more “dirt,” and more pudding on top.
But that’s not all! We wanted to decorate it, but we weren’t sure what we wanted to put on top. Jillian suggested gummy worms, but we didn’t have any. We did, however, have some gummy Mario Kart characters!
She thought it would be perfect to have them “racing around” in the mud…
But alas, the gummies were only their heads — not little karts. Shoot.
Ah, well, we used them anyway!

Ok, dirt cup finished. Time to eat!
Honestly, it was almost too pretty to eat.
Now, it’s just not fair that Jillian gets all the good stuff, and poor Trevor doesn’t get in on any of the action. He literally heard the “mmmmmmms” and “yummy’s” and came a-runnin’!
So I took what was leftover and made him his own “dirt cup.”
Now everyone’s happy!
There is no doubt we will be making these again very soon! They were a huge hit!
